Bread Baking IN FEZ

Bread Baking
If you follow the intoxicating smell of fresh bread through the alleys of the medina, you will find the neighborhood’s communal bread oven. This is where locals bring their dough, shaped into small balls, to make traditional Moroccan round breads, with very few families having an oven in their house. It is not uncommon to see the wealthiest families baking their bread in the communal oven which is both more economical and above all allows them to avoid heating their house unnecessarily, especially in summer.
As in many cultures, bread is the traditional staple food which is still prepared at home in most Moroccan families today. Come discover this tradition from another time and learn how to prepare Moroccan bread.
The workshop begins with the preparation of the paton, the kneading and shaping in the Moroccan style. While the bread dough is being proofed, the workshop continues in the communal oven near Blue Gate. The workshop is also an opportunity to participate in the Mint Tea ritual served in the room of spices and traditional pots .
Learn how to make this traditional “homemade” bread, an ancestral know-how of Moroccan culture for a cultural and culinary journey.
